Why do we use MSG?

Also known as monosodium glutamate, MSG is a naturally occurring flavour enhancer found in umami-rich foods such as tomatoes, mushrooms and Parmesan cheese. It was first isolated from seaweed, and has been part of Asian cooking for more than a century.

Crucially, MSG contains around one-third of the sodium of table salt, making it a smarter way to boost flavour without overloading on sodium, which is damaging when consumed in excess (World Health Organization).

In the 1950s, MSG was wrongly associated with so-called “Chinese restaurant syndrome” and subsequently shunned in the West. This claim was never supported by credible science and is now widely recognised as being rooted in racial bias rather than fact.
